Mahi-Mahi Italiano

Feeds 4

 

Substitution: Scallops, Shrimp,  Basa, Tilapia, Sole, Flounder, Cod, Haddock, Orange Roughy, Red Snapper, Grouper, Tilapia, Walleye, Sea Bass, Salmon, Tuna, Halibut, Mahi-Mahi, Salmon

 

o   4 each Mahi-Mahi fillets, cut thinly to one-half inch thickness

o   ½ cup bread crumbs

o   1/8 cup powdered Parmesan cheese

o   ½ teaspoon garlic powder

o   1/8 teaspoon pepper

o   ½ teaspoon salt

o   2 tablespoons olive oil

 

In a bowl, blend dry ingredients. Rinse fish fillets with water, and shake off excess water. Roll fish in bread crumb mixture.

 

Heat non-stick pan to medium-high. Add olive oil. Add breaded fish fillets and cook only about 2 minutes per side, until just browned.

 

Serve immediately, or they can be held in a 180 degree oven for a bit, so that you can get the meal served.
