Orange Roughy under Orange Sauce

 

Substitution: Salmon, Swordfish, Tuna, Mako Sharo, Marlin, Halibut, Grouper, Scallops, Lobster, Shrimp, Mahi-Mahi, Sea Bass

 

o   2 lb Orange Roughy Fillets

o   2 t butter

o   1 t flour

o   ½ c orange juice

o   2 t lemon juice

o   Dash nutmeg

o   ¼ t salt

 

Cut the orange roughy into 8 portions and set it aside.

Melt the butter in a pan

Add the flour and stir well until blended.

Mix in the remaining ingredients and stir the mixture over a low heat until it’s thickened.

Broil the orange roughy 4" from heat source until the fish flakes easily when tested with a fork.

Pour the orange sauce over the fish and serve.
