Sole Florentine

 

Substitution: Scallops, Shrimp, Lobster, Crab Legs, Basa, Tilapia, Sole, Flounder, Cod, Haddock, Orange Roughy, Red Snapper, Grouper, Tilapia, Walleye, Sea Bass, Halibut, Mahi-Mahi, Salmon

 

o   Butter

o   3 lbs Sole Fillets

o   Fresh spinach, cleaned

o   1 med onion, sliced

o   ¾ lb mushrooms, sliced

o   1 c mayonnaise

o   1 c Parmesan cheese

o   3 T Worcestershire

o   1 lemon

 

Grease a large baking dish with the butter.

Layer the dish in the following order: onions, mushrooms, spinach and sole (dark side down).

Squeeze the lemon over the sole.

Mix the mayonnaise, cheese and Worcestershire sauce and spread the mixture over the sole.

Bake the fish at 3500F for about 20 minutes.

The fillets should be golden brown and flake easily when tested with a fork.
