Stuffed Baby Rainbow Trout
o 2 Rainbow Trout, split, gutted & boned
o Salt & Pepper to taste
o 1/3 c onions, chopped
o 2 T green pepper, chopped
o 1/3 c celery, chopped
o 1 c mushrooms, chopped
o 1 1/3 c breadcrumbs, fresh
o 2 T parsley, chopped
o Dash cayenne pepper
o Vegetable oil
Preheat the oven to 3500F.
Wash and dry the fish.
Salt & pepper the body cavities.
Heat the butter in a large frying pan and sauté the onions, green pepper and celery for about 5 minutes stirring frequently.
Stir in the mushrooms and sauté about 3 minutes longer.
Stir in the breadcrumbs, parsley and cayenne.
Oil a baking pan.
Oil the exterior of the fish.
Loosely stuff the fish with the bread-crumb mixture and fasten cavities shut with toothpicks.
Bake 15 to 20 minutes or until the fish seems firm when pressed.
Remove the toothpicks and cut into serving pieces.
